In 1990 we took over 2 ha of the family land, The fresh juice was sold in bulk to wine murchants, Our first winery has been built in 1995.
From 1991 to 1998, we have planted our Chablis and our Petit Chablis, Every year we continue planting these two appellations
Our first wine was bottled in 1994, We obtained our first awards on this vintage with a golden medal at the "Concours des Vins de Chablis" and two stars at the Guide Hachette des Vins
Because we wish to emphasize a respectful and qualitative work, the whole harvest in boxes has become a priority in order to preserve all the berries for the best aromatic and gustative expression. It consists in driving the grapes from the vine to the press, by means of a lifting belt, without any manipulation until the pressurage.
A first, our red Burgundy sees its bottling beginning in 2007 after its very first harvest from the previous year
The objective of the new winery is to be able to be more efficient and to optimize the reception of the harvest with the installation of two pneumatic presses. Those allow us to press at the same time mechanical harvesting and manual harvesting as soon as they arrive at the estate. This improves our reactivity while the harvest becomes ripe.
We start working among organic practices on the most part of our vineyard by working the soils, removing chemical imputs and by cancelling yeasts additions
We ask Ecocert to enter into organic farming for all our white wines in 2011. The following year, in 2012, we make the same request for Burgundy Pinot Noir.
- 2012Our Chablis croix aux moines 2010 is elected the Best Chardonnay of the World, after having received excellent quotations by Robert Parker, Allan Meadows and Stephen Tanzer
Our vineyards expand in 2012 with the Extension Appellation d'Origine Controlée (AOC) "Chablis Premier Cru" Fourchaume and Beauroy, which extends by one year the conversion AB for these wines.
We are proud having received the organic agreement on our 2014 vintage for our Petit chablis, chablis, chablis croix aux moines and chablis Côte de Léchet
Fourchaume, Troesmes and Pinot Noir will be certified on the 2015 vintage
Twenty years ago, we gave the Beauroy its name according to its climate. Today, it is important to restore its character by renaming it according to its historical roots: Troesmes.
