- Harvest : Manually harvested. The grapes are directly conveyed to the press for a better respect.
- Work in the vines : Organic practices, working of the soils, disbudding.
- Vinification : Setting of the juice during 24 hours. Alcoholic fermentation on native yeasts and malolactic fermentation in regulated stainless steel tanks for 70 % of the volume, in oak barrels for the left. Racking after malolactic fermentation. Blending of wines matured in vats and in barrels, maturing on fine lies for 6 months. Light fining.
